In Modave, nestled in the serene province of Liège, La Roseraie stands like a beacon of tradition and innovation. Now run by chef Marie Trignon, who succeeded her father Vincent, this Michelin-starred restaurant harmoniously combines its historic past with a fresh vision of contemporary gastronomy and design.⁣
⁣
Marie, inspired by her years in London and her passion for interior design, has reimagined the historic villa. The dining room now features bespoke tables by Belgian studio Interni Edition, adorned with resin and gold leaf, while the interiors, once red, have been replaced by a modern palette of whites, beiges and blacks...⁣
⁣
The property extends beyond the restaurant with five eco-friendly ‘shelters’ designed by architect Maxime Faniel and his team. These luxurious glass structures echo the estate's 19th-century greenhouse and invite guests to immerse themselves in the surrounding gardens and forest, protected by Natura 2000.⁣

Marie's cuisine pays homage to her father's French classics, enriching them with spices and light, playful touches. Seasonal ingredients take centre stage, honouring both tradition and creativity. Whether sampling its delicate plates or exploring the enchanting grounds, a stay at La Roseraie is a feast for the senses.⁣
